Andhra Style Beans Kudumulu, also known as steamed dumplings, are a traditional South Indian snack that's both nutritious and delicious. Made with a mixture of beans, rice flour, and spices, these steamed delights are perfect for breakfast, a light snack, or even as a part of a festive meal. Let’s dive into this flavorful and healthy recipe!

Ingredients:

  • 1 cup rice flour

  • 1 cup French beans, finely chopped

  • 1/2 cup grated coconut

  • 2 green chilies, finely chopped

  • 1 teaspoon cumin seeds

  • 1 teaspoon mustard seeds

  • 1/2 teaspoon turmeric powder

  • A pinch of asafoetida (hing)

  • Salt to taste

  • 1 tablespoon oil

  • Water as needed

  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Beans:

    • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

    • Add finely chopped green chilies and a pinch of asafoetida. Sauté for a few seconds.

    • Add the finely chopped beans and turmeric powder. Sauté for a couple of minutes until the beans are slightly tender.

    • Add grated coconut and salt. Mix well and cook for another minute. Remove from heat and let it cool.

  2. Prepare the Dough:

    • In a mixing bowl, combine rice flour with a pinch of salt. Gradually add hot water and knead to form a smooth and soft dough. Cover and let it rest for 10 minutes.

  3. Form the Dumplings:

    • Divide the dough into small equal portions. Flatten each portion into a small disc.

    • Place a spoonful of the prepared beans mixture in the center of each disc. Fold the edges over the filling and shape them into a dumpling. You can also roll them into small balls if preferred.

  4. Steam the Dumplings:

    • Place the dumplings in a steamer basket. Steam for 15-20 minutes or until they are cooked through and firm.

    • Once done, remove from the steamer and let them cool slightly.

  5. Serve:

    • Garnish the steamed dumplings with fresh coriander leaves.

    • Serve hot with coconut chutney or any spicy dip of your choice.

Tips for Perfect Beans Kudumulu:

  • Consistency of the Dough: Ensure the dough is smooth and not too dry. Adding hot water gradually helps in achieving the right consistency.

  • Steaming: Do not oversteam the dumplings as they might become hard. Check for doneness by inserting a toothpick; it should come out clean.

  • Variations: You can add other vegetables like carrots, peas, or spinach to make the dumplings more nutritious.
