Let’s dive into this flavorful and healthy recipe!
Ingredients:
1 cup rice flour
1 cup French beans, finely chopped
1/2 cup grated coconut
2 green chilies, finely chopped
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
A pinch of asafoetida (hing)
Salt to taste
1 tablespoon oil
Water as needed
Fresh coriander leaves for garnish
Instructions:
Prepare the Beans:
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
Add finely chopped green chilies and a pinch of asafoetida. Sauté for a few seconds.
Add the finely chopped beans and turmeric powder. Sauté for a couple of minutes until the beans are slightly tender.
Add grated coconut and salt. Mix well and cook for another minute. Remove from heat and let it cool.
Prepare the Dough:
In a mixing bowl, combine rice flour with a pinch of salt. Gradually add hot water and knead to form a smooth and soft dough. Cover and let it rest for 10 minutes.
Form the Dumplings:
Divide the dough into small equal portions. Flatten each portion into a small disc.
Place a spoonful of the prepared beans mixture in the center of each disc. Fold the edges over the filling and shape them into a dumpling. You can also roll them into small balls if preferred.
Steam the Dumplings:
Place the dumplings in a steamer basket. Steam for 15-20 minutes or until they are cooked through and firm.
Once done, remove from the steamer and let them cool slightly.
Serve:
Garnish the steamed dumplings with fresh coriander leaves.
Serve hot with coconut chutney or any spicy dip of your choice.
Tips for Perfect Beans Kudumulu:
Consistency of the Dough: Ensure the dough is smooth and not too dry. Adding hot water gradually helps in achieving the right consistency.
Steaming: Do not oversteam the dumplings as they might become hard. Check for doneness by inserting a toothpick; it should come out clean.
Variations: You can add other vegetables like carrots, peas, or spinach to make the dumplings more nutritious.
