Ingredients:
500 grams chicken, cut into pieces
1 cup yogurt (curd)
2 tablespoons oil
1 large onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
For the Tempering:
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds
1 dried red chili
10-12 curry leaves
Instructions:
Marinate the Chicken:
In a bowl, mix the chicken pieces with yogurt, turmeric powder, and salt. Let it marinate for at least 30 minutes to an hour.
Prepare the Kadhi Base:
Heat oil in a large pan over medium heat. Add the finely chopped onions and sauté until they turn golden brown.
Add the ginger-garlic paste and slit green chilies. Sauté for another minute.
Add the chopped tomatoes and cook until they turn soft and mushy.
Add red chili powder, coriander powder, and cumin powder. Mix well and cook for a couple of minutes until the spices are well incorporated.
Cook the Chicken:
Add the marinated chicken to the pan and mix well with the spice mixture.
Cover and cook on medium heat for 15-20 minutes or until the chicken is tender and fully cooked.
Prepare the Tempering:
In a small pan, heat oil over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.
Add the dried red chili and curry leaves. Sauté for a few seconds.
Pour this tempering over the chicken kadhi and mix well.
Finish and Serve:
Add garam masala and mix well. Cook for another 2-3 minutes.
Garnish with fresh coriander leaves.
Serve hot with steamed rice or chapati.
