Ingredients:
500 grams mustard greens (sarson)

2 medium tomatoes, pureed
2 tablespoons maize flour (makki ka atta)
3-4 tablespoons ghee (clarified butter)
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Prepare the Greens:
Wash the mustard greens, spinach, and bathua thoroughly.
Chop the greens and blanch them in boiling water for 5-7 minutes. Drain and cool.
Once cooled, blend the greens into a coarse paste and set aside.
Cook the Aromatics:
Heat ghee in a large pan over medium heat.
Add cumin seeds and let them splutter.
Add the finely chopped onions and sauté until golden brown.
