Ingredients:
1 cup basmati rice
1/2 cup yellow moong dal (split yellow lentils)
1 large carrot, diced
1 cup green peas
1 medium potato, diced
1 large tomato, chopped
1 large onion, finely chopped
2 green chilies, slit
1-inch piece of ginger, grated
4-5 garlic cloves, minced
2 tablespoons ghee (clarified butter)
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Prepare the Ingredients:
Wash the rice and moong dal together until the water runs clear. Soak them in water for about 20 minutes. Drain and set aside.
Chop and prepare the vegetables.
Cook the Aromatics:
Heat ghee in a large pressure cooker over medium heat.
Add cumin seeds and let them splutter.
Add the finely chopped onion and sauté until golden brown.
Stir in the grated ginger, minced garlic, and slit green chilies. Cook for another minute.
Add the Vegetables and Spices:
Add the diced carrot, potato, and green peas to the cooker. Sauté for a few minutes.

Add 4 cups of water and mix everything together.
Cook the Khichdi:
Close the lid of the pressure cooker and cook on medium heat for 3-4 whistles.
Let the pressure release naturally before opening the lid.
Serve:
Garnish the khichdi with fresh coriander leaves.
Serve hot with a dollop of ghee, pickle, and yogurt or raita on the side.
