Ingredients:
1 cup rice
1/2 cup yellow moong dal (split yellow lentils)
2 large eggs
1 small onion, finely chopped
1 small tomato, chopped
2 green chilies, slit
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
2 tablespoons oil or ghee
Fresh coriander leaves for garnish
4 cups water
Instructions:
Prepare the Ingredients:
Wash the rice and moong dal together and soak them in water for about 15-20 minutes. Drain and set aside.
Finely chop the onion and tomato, and slit the green chilies.
Cook the Aromatics:
Heat oil or ghee in a pressure cooker over medium heat.
Add cumin seeds and let them splutter.
Add the finely chopped onion and sauté until golden brown.
Stir in the green chilies and cook for another minute.

Crack the eggs into the pan and scramble them until fully cooked. Add a pinch of salt and garam masala. Set aside.
Combine and Serve:
Once the pressure is released, open the cooker and fluff the khichdi with a fork.
Gently mix in the scrambled eggs.
