1 cup rolled oats

1-2 green chilies, finely chopped
A few curry leaves
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder (optional)
Salt to taste
A pinch of sugar
1/4 cup grated coconut (optional)
1/4 cup chopped coriander leaves for garnish
Juice of half a lemon
Instructions:
Roast the Oats and Poha:
Dry roast the oats in a pan over medium heat until they turn slightly golden and aromatic. Remove and set aside.
In the same pan, lightly roast the poha for a minute or two until they are crisp. Remove and set aside.
Prepare the Tadka (Tempering):
Heat the vegetable oil in a large pan over medium heat.
Add the mustard seeds and let them splutter.
Add the cumin seeds, green chilies, and curry leaves. Sauté for a few seconds until fragrant.
Add the Nuts and Spices:
Add the peanuts and roasted chana dal to the pan. Roast them for a couple of minutes until they are golden and crunchy.
Add the turmeric powder, red chili powder (if using), and salt. Mix well.
Combine and Cook:
Add the roasted oats and poha to the pan. Mix everything well to ensure the oats and poha are evenly coated with the spices.
Add a pinch of sugar to balance the flavors. Mix well.
Garnish and Serve:
Turn off the heat and add the grated coconut (if using) and chopped coriander leaves.
Squeeze the juice of half a lemon over the mixture and give it a final stir.
