Kesari Bath is a popular Indian dessert known for its rich flavors and aromatic essence. This healthy twist combines quinoa and sabudana (tapioca pearls) to create a nutritious and delicious treat that’s perfect for festive occasions or a wholesome dessert option. Let’s dive into this delightful recipe!

Ingredients:

  • 1/2 cup quinoa

  • 1/2 cup sabudana (tapioca pearls)

  • 1/4 cup ghee (clarified butter)

  • 1 cup sugar or a natural sweetener of your choice

  • 2 cups water

  • 1/4 cup milk

  • A pinch of saffron strands soaked in 1 tablespoon warm milk

  • 1/2 teaspoon cardamom powder

  • 2 tablespoons mixed nuts (cashews, almonds, raisins)

  • A few drops of rose water or kewra water (optional)

  • Edible silver leaves (optional) for garnish

Instructions:

  1. Prepare Quinoa and Sabudana:

    • Rinse the quinoa thoroughly under cold water. Drain and set aside.

    • Rinse the sabudana in water until the water runs clear. Soak them in enough water for about 4-6 hours or until they become soft.

  2. Cook Quinoa and Sabudana:

    • In a pan, heat 1 tablespoon ghee and add the rinsed quinoa. Sauté for a couple of minutes until the quinoa is lightly toasted.

    • Add 1 cup of water and bring it to a boil. Reduce the heat, cover, and let it simmer for about 15 minutes or until the quinoa is cooked and water is absorbed. Set aside.

    • In another pan, heat 1 tablespoon ghee and add the soaked sabudana. Sauté for a few minutes until they become translucent. Add 1/2 cup of water and cook until the sabudana pearls are soft and cooked through. Set aside.

  3. Prepare the Kesari Bath:

    • In a large pan, heat the remaining ghee. Add the mixed nuts and sauté until they are golden and aromatic. Remove and set aside for garnish.

    • Add the cooked quinoa and sabudana to the pan. Mix well.

    • Add the sugar, saffron milk, and cardamom powder. Stir continuously until the sugar dissolves and the mixture thickens.

    • Add the milk and continue to cook until the mixture reaches a halwa-like consistency.

    • Add rose water or kewra water if using. Mix well and cook for another couple of minutes.

  4. Serve:

    • Transfer the Kesari Bath to a serving dish. Garnish with the sautéed nuts and edible silver leaves (if using).

    • Serve warm or at room temperature.

Tips for Perfect Quinoa and Sabudana Kesari Bath:
