Ingredients:
1/2 cup quinoa
1/2 cup sabudana (tapioca pearls)

2 cups water
1/4 cup milk
A pinch of saffron strands soaked in 1 tablespoon warm milk
1/2 teaspoon cardamom powder
2 tablespoons mixed nuts (cashews, almonds, raisins)
A few drops of rose water or kewra water (optional)
Edible silver leaves (optional) for garnish
Instructions:
Prepare Quinoa and Sabudana:
Rinse the quinoa thoroughly under cold water. Drain and set aside.
Rinse the sabudana in water until the water runs clear. Soak them in enough water for about 4-6 hours or until they become soft.
Cook Quinoa and Sabudana:
In a pan, heat 1 tablespoon ghee and add the rinsed quinoa. Sauté for a couple of minutes until the quinoa is lightly toasted.
Add 1 cup of water and bring it to a boil. Reduce the heat, cover, and let it simmer for about 15 minutes or until the quinoa is cooked and water is absorbed. Set aside.
In another pan, heat 1 tablespoon ghee and add the soaked sabudana. Sauté for a few minutes until they become translucent. Add 1/2 cup of water and cook until the sabudana pearls are soft and cooked through. Set aside.
Prepare the Kesari Bath:
In a large pan, heat the remaining ghee. Add the mixed nuts and sauté until they are golden and aromatic. Remove and set aside for garnish.
Add the cooked quinoa and sabudana to the pan. Mix well.
Add the sugar, saffron milk, and cardamom powder. Stir continuously until the sugar dissolves and the mixture thickens.
Add the milk and continue to cook until the mixture reaches a halwa-like consistency.
Add rose water or kewra water if using. Mix well and cook for another couple of minutes.
Serve:
Transfer the Kesari Bath to a serving dish. Garnish with the sautéed nuts and edible silver leaves (if using).
Serve warm or at room temperature.
