Nutritious and Delicious Sprouts Dosa Recipe: Perfect for a Healthy Breakfast

Ingredients:
1 cup moong sprouts (green gram sprouts)
1 cup rice
1/4 cup urad dal (split black gram)

Instructions:
Soak and Grind:
Rinse the rice, urad dal, and fenugreek seeds together. Soak them in water for at least 4-5 hours or overnight.
Drain the water and grind the soaked mixture into a smooth batter, adding water as needed.
In a separate grinder, blend the moong sprouts into a coarse paste and mix it with the rice-urad dal batter.
Add salt to taste and mix well. Let the batter ferment for 8-10 hours or overnight.
Prepare the Dosa:
Once the batter is well-fermented, give it a good stir. The consistency should be similar to regular dosa batter.
Heat a non-stick skillet or dosa tawa over medium heat. Lightly grease it with oil.
Pour a ladleful of batter onto the skillet and spread it in a circular motion to form a thin dosa.
Drizzle a few drops of oil around the edges. Cook until the dosa turns golden brown and crispy, about 2-3 minutes.
Optionally, you can add chopped onions, green chilies, and coriander leaves on top of the dosa before flipping it.
Serve:
Fold the dosa and remove it from the skillet. Repeat the process with the remaining batter.
Serve hot with coconut chutney, tomato chutney, or sambar.
