1 cup rolled oats

1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
1/2 teaspoon garam masala
Salt to taste
2 cups water or vegetable broth
1 tablespoon oil
Fresh coriander leaves for garnish
Lemon juice (optional)
Instructions:
Prepare the Vegetables: Finely chop the onion, tomato, green chili (if using), and grate the carrot. Set them aside along with the peas.
Heat the Oil: In a pan, heat the oil over medium heat. Add the mustard seeds and cumin seeds. Let them splutter.
Sauté the Vegetables: Add the chopped onion and green chili to the pan. Sauté until the onion turns translucent. Then, add the chopped tomato, grated carrot, and peas. Cook for a few minutes until the vegetables are tender.
Add Spices: Stir in the turmeric powder, red chili powder, and garam masala. Cook for another minute until the spices are well mixed with the vegetables.
Cook the Oats: Add the rolled oats to the pan and mix well with the vegetables and spices. Pour in the water or vegetable broth. Stir to combine.
Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for about 5-7 minutes or until the oats are cooked and the mixture has thickened to your desired consistency. Stir occasionally to prevent sticking.
Season: Add salt to taste and mix well.
